
These tasty muffins are a nutritious snack with 5 g of protein and 2 g of fibre per muffin. Who would have thought vegetables and chocolate could taste so good together!
Ingredients:
Muffins
- 3 eggs
- 150g Greek yoghurt
- 1 tsp vanilla extract
- 60g coconut flour
- 2 T dark cocoa powder
- 1/2 tsp salt
- 1 tsp baking powder
- 3 grated zucchini (~250g)
- 3 T milk or milk alternative
- 4-5 T sweetener of choice e.g brown sugar, stevia or maple syrup (if using maple syrup omit the milk)
- 6 squares dark chocolate or 1/4 cup dark chocolate chips
Chocolate icing
- 100g yoghurt
- 2 Tbsp cocoa powder
- 2-3 tsp maple syrup
METHOD:
- Preheat the oven to 180°C.
- Grate the zucchini and wring out the excess moisture/ pat with paper towels.
- Mix all the wet ingredients together in a large bowl.
- In a small bowl, mix the dry ingredients until well mixed and there are no lumps. Stir the dry ingredients into the wet ingredients.
- Stir in the zucchini and then the chocolate.
- Divide between 12 muffin cases and bake for 25 minutes.
- Let cool before icing! Enjoy
