These healthy muffins are super delicious and nutritious with the main ingredients being fruit, vegetables, seeds and wholegrains. They are packed full of fibre, and use only healthy fats from avocado & chia seeds. Great for a snack or for kids lunch boxes.

Ingredients:
1 beetroot, peeled & grated (approx 150 g)
2 large ripe bananas
1 small or 1/2 a large ripe avocado
1 cup oats
1 cup wholemeal flour
1 egg
1/4 cup Cacao
1/8 cup chia seeds
3-4 tablespoons maple syrup or honey
1 teaspoon cinnamon

1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup dark chocolate chips (optional)

To make:
Preheat the oven to 200 degrees celsius
Blend the oats in the food processor until smooth
Add all but the last 3 ingredients into the food processor
Blend until well mixed
Stir through the baking soda, baking powder and dark chocolate chips

Divide into 12 greased muffin trays
Bake for 25-30 minutes until cooked through (they may be a bit quicker in your oven I think my oven is a bit on the slow side!)
