Now that spring is underway, there are lots delicious & new in-season produce we can enjoy!
With the change of season comes vibrant fruit & veggies that are perfect for creating healthy, nourishing meals and snacks.
Here are some easy ways to enjoy them:
- Lemons: squeeze over veggies or fish, zest into baking, or add to salad dressings.
- Grapefruit: enjoy fresh for breakfast, a snack or add to salads. NB: If you’re on certain medications e.g the contraceptive pill, check with your healthcare provider before having grapefruit, as it can affect how some medication work.
- Avocados: smash on wholegrain toast and add your favourite protein toppings and extra veggies, make guacamole, or blend to make a creamy dressing or smoothie!
- Silverbeet: sauté with garlic, add to frittatas, or stir into curries.
- Cauliflower: make cauliflower rice, roast with spices, or you can even add to smoothies (and won’t taste it!).
- Broccoli: roast with olive oil, toss into stir-fries, or steam as a quick side.
- Carrots: enjoy raw with hummus, roast until caramelised, or grate into baking and slaw.
- Cabbage: shred for slaws, sauté as a side, and add to stir-fries to add bulk and texture.
- Beetroot: roast for earthy sweetness, or grate raw into salads.
- Strawberries: add to yoghurt, blend into smoothies, or enjoy fresh as a snack.
- Spinach: toss into salads, blend into smoothies, or stir through any hot dishes for extra greens.
- Navel oranges: peel for an on-the-go snack, add segments to salads, or use the juice for a zesty citrus dressing.
- Asparagus: grill with lemon, or add to salads…enjoy it while you can!
